Let's prepare the Amlou together

Do you know Moroccan amlou? Have you ever tasted it? It is a delicious spreadable cream, typical of the local tradition. Finding it on the market is not so easy, so we thought we would try making a homemade version with you.

What is Moroccan amlou and what is it used for

As mentioned at the beginning, amlou is a voluptuous spread made with almonds, argan oil and honey. It is normally used for breakfast spread on toast, for snacks and snacks, in the preparation of cakes and it is customary today, as in the past, to offer it to guests at weddings.
Tradition also attributed aphrodisiac properties to this tasty cream.

How to make amlou: ingredients and procedure


To prepare your amlou you will need:

  • 300 g whole, unpeeled almonds
  • 80 ml of edible argan oil
  • 75-80 ml honey

Remove the almonds from the oven, transfer them to a blender and chop them finely until they reach an almost creamy consistency.
At this point (take care that the almond paste is not still too hot), add the argan oil and continue processing until well blended. Stir in the honey until all the ingredients are well blended.
Once ready, the amlou should be stored in an airtight glass jar away from heat sources.
We give you no special storage instructions... it will disappear from the jar in less than 4 weeks.

Can't find argan oil? You can replace it with soya or sunflower oil. If you are on a vegan diet, you can use maple or agave syrup instead of honey.
